Year 7 Students Share their Banana Pancake Recipe


Our Year 7 Home Economics students recently learned how to cook delicious banana pancakes. After listening carefully to the instructions from their teacher, the students focused on making the batter and cooking and flipping of the pancakes.


The students wish to share this delicious recipe with you:

Ingredients:

- 1 Ripe banana

- 2 Free-range eggs

- 1 Tbsp brown rice flour

- 1 Tbs dessicated coconut

- 1 Tsp coconut oil or olive oil

- 1 Tbsp reduced-fat Greek natural yoghurt

- 1 Tsp maple syrup

- 1/4 Punnetstrawberries sliced


Method:

Place banana, eggs, dessicated coconut and brown rice flour in a blender and blitz until smooth. Heat a non-stick frying pan over medium-low heat. Wipe the pan with a little of the oil and pour in 1/4 cup of batter for each pancake.


Cook 1-2 minutes or until bubbles start to form on the surface, then flip and cook for another 1-2 minutes or until golden.


Repeat with any remaining batter, making four pancakes in total. Serve pancakes topped with yogurt, maple syrup and strawberries.
